Oaxacan Roots

The food we work with comes from one of the world's most biodiverse culinary regions. Oaxacan gave us mole negro, tlayudas, mezcal, and a relationship with corn, beans, and chiles that spans millennia. We do not modernize these recipes. We respect them.

California Lens

We are based in California. A place defined by coastal air, active lives, and an appreciation for quality that cuts through noise. That perspective shapes everything: how we present, what we include, and who we are talking to.

Whole Food Philosophy

Oaxacan cooking was never designed around processed food because processed food did not exist. The traditional diet: black beans, pasture raised meats, fresh coastal fish, dried chiles, herbs from the garden. This is exactly what modern nutrition science recommends.
